What Kimoto Means

A Name Borrowed from the Brewhouse

Kimoto is one of the oldest traditional yeast-starter methods in Japanese sake brewing — a labor-intensive process where brewers mash and knead rice by hand to cultivate natural lactic acid. It produces sake with remarkable depth, body, and resilience, but it asks for time.

We took that idea into the kitchen. We don't run a conveyor belt or a steam tray. Every piece of sushi, every bowl of soup, every grilled plate is made to order. Our guests come here because the difference between fast sushi and handcrafted sushi is something you can taste.

Nothing sits on a buffet line. You order a round, we make it, it comes out hot or cold — as the chef intends. Order as many rounds as you like.

Hospitality That Slows You Down

Your server paces the meal with you. We want the fourth round to taste as good as the first, so we encourage small, frequent orders over overloaded plates.
